Lemon Lovin' Tummy Gummies

I adapted this recipe from my original 'Berry Gummy' recipe. This recipe is so easy to make. In fact I made it in our campervan while we were camping in New Zealand. I usually made these lemon gummies the night before we would be going on a hiking adventure. Because it was quite chilly in NZ it didn't need refrigeration, i'd just slice it up and pop them into a container to take with us on hikes. The reason I took gelatin with us on our holiday is because it's a wonderfully nourishing food supplement for gut health and its really easy to incorporate into a lot of different meals. Ingredients

  • 5 Tbsp organic gelatin powder mixed into 1 cup filtered water to 'bloom' 
  • 1.5 - 2 cups of filtered water 
  • Juice of 2-4 lemons (do it to your personal preference, it will also depend on how strong the lemon flavour is with each lemon)
  • 1-2 Tbsp raw honey or liquid stevia to taste
  • Optional add ins; 1 tsp turmeric or ginger 

METHOD

1. Mix the gelatin and water together in a small bowl and set it aside to bloom and thicken for a minute or two. 
2. When the gelatin has bloomed add the gelatin and the rest of the water to a small saucepan and heat on low and allow the gelatin to dissolve completely. 
3. Remove the sauce pan from the heat and stir through the sweetener and lemon juice through to taste. 
4. Now pour the jelly liquid into a glass container and allow the mixture to cool to room temperature on the bench, then place in the fridge to set.
5. When it's ready, slice into squares or triangles and enjoy!
