3 Ingredient Tortillas
GF, DF, EF, NF, VEGAN
*This recipe was adapted from the recipe on the back of Otto’s Cassava Flour which is the brand I use and recommend as it has the most consistent results. I purchase it from iHerb, feel free to use my discount code “CJJ916” for a discount .
Makes 4 Tortillas (can easily double the below recipe to make 8)
INGREDIENTS
1 cup Ottos cassava flour *
3 Tbsp olive oil
1/3 cup + 3-4 Tbsp boiling water
Optional: a big pinch of salt, 1-2 garlic cloves, turmeric powder, thyme or other dried herbs)
INSTRUCTIONS
Add all ingredients into your food processor or Thermomix , starting with 1/3 cup boiling water and blend. Add in 1 Tbsp of the extra boiling water at t at a time until the mix turns into a dough.
Split the dough into 4 and roll each one out in-between two pieces of baking paper into an even round tortilla. Make sure it’s not too thick.
Fry each tortilla in a frying pan, in oil of choice (I use ghee) on both sides until golden brown and cooked through.
Serve immediately and fill with your favourite fillings. We filled ours with slow roasted beef cheeks, spinach, a cucumber and garlic coconut yoghurt dip, cultured veggies and avocado.
