Cauliflower Puree

Cauliflower puree is one of my staple recipes. I make this recipe nearly every single week. Not only is it a really yummy and easy way to sneak more veggies into your diet, it's a great alternative to potato puree / mash. You can serve this recipe as a side, make it into a soup by adding in other veggies, spice or herbs + extra bone broth, stir it through curries, serve with my Hidden Liver Meatballs, my slow roasted beef cheeks, any roast meats and more.


INGREDIENTS

  • 1 large cauliflower

  • Filtered water

  • ¼ block of grass-fed butter or ghee

  • Salt + pepper

  • Optional Extras; turmeric, chilli, fresh herbs, baby spinach, cheese, cream, bone broth concentrate

INSTRUCTIONS

1. Roughly chop the cauliflower into florets. 
2. Add the cauliflower into a steamer in a large sauce pan along with filtered water. Steam the cauliflower until the cauliflower is soft and cooked through.
3. Strain any water from the cauliflower and add it into a high quality blender or thermomix along with the butter or ghee. If you’re adding in any of the optional ingredients, pop them in too. Blitz until completely smooth and creamy.  Scrape down the sides of the bowl and re-blend.
4. I like to top it with salt and pepper when serving.
