(Egg Free) Chocolate Stuffed Ginger Cookies
This recipe is adapted from the AMAZING Sneh’s 5 Ingredient Vegan Almond and Tahini Cookies from Cook Republic who adapted it from The Yoga Kitchen by Kimberley Parsons. I’m terrible at following recipes, but I saw Sneh’s cookie recipe and had to try them… with my own twist. Whenever I use maple syrup in recipes, it always reminds me of a subtle gingerbread flavour, so I decided to add in some ginger powder to enhance this. I also had some leftover chocolate that needed using up so I popped a few squares into the middle of the cookie dough, which turned out to be a very good idea. When you pull them out of the oven, the chocolate turns into melty pools of deliciousness.
These cookies are perfectly crunchy on the outsides, yet soft and chewy in the middle. And as an extra bonus, they’re also;

CHOCOLATE STUFFED GINGER COOKIES
Makes 10 cookies
INGREDIENTS
2 cups blanched almond meal/ flour
3/4 cup hulled tahini
1/3 - 1/2 cup pure maple syrup
1/2 tsp vanilla powder
1/2 tsp baking soda
1 tsp apple cider vinegar
1-1.5 Tbsp ginger powder
A good pinch of sea salt
10 squares of good quality chocolate (make sure it’s additive free)
INSTRUCTIONS
Preheat oven to 170C and line 2x baking trays with baking paper.
Mix all the cookie ingredients (except chocolate squares) together in a mixer until combined.
Roll the mixture into 10 cookie balls . Place a dough ball in the palm of your hand and flatten it. Place a square of chocolate in the middle of the flattened cookie dough. Bring the sides up and roll into a ball. Place onto the lined tray and press into an even cookie shape.
Repeat with the remaining dough balls.
Place into the oven and bake for 15 minutes.
Remove from the oven and allow to cool for 10-15 minutes before enjoying one warm.
