GF Snickers Slice

Gluten free, dairy free, egg free + refined sugar free

I just updated this recipe to make the filling much easier / faster. Previously you had to boil down 2x 400ml tins of coconut cream to make the coconut condensed milk, but this always took 35-45 minutes. As an alternative, I found an option where you can buy a tin of coconut condensed milk - so the filling now only takes 1-2 minutes max to make. Much better. I hope you love this recipe as much as I do 😊

BASE INGREDIENTS

  • 2 cups blanched almond meal

  • 1/2 cup melted coconut oil (butter and ghee also work)

  • 3 Tbsp tapioca flour

  • 2-3 Tbsp maple syrup

  • 1/2 tsp bicarb soda

  • 3 Tbsp collagen powder (you can use “JORDIE10” for 10% off)

FILLING INGREDIENTS

  • 1 heaped cup smooth peanut butter

  • 3-4 Tbsp coconut oil

  • 210g coconut condensed milk (This is the brand I used you can use my iHerb code “CJJ916” for a discount, or try this Aussie brand)

CHOCOLATE TOPPING

  • 150-200g dark chocolate (I find the filling quite sweet so I use really dark chocolate to help balance out the sweetness)

  • 1 Tbsp coconut oil

  • Chopped and roasted peanuts for some crunch / texture

  • Optional: Bee pollen (I use this one - you can use “jordiepieface” for $15 off your first order through Jivita ($130 min order)).

  • Optional: a sprinkle of sea salt


INSTRUCTIONS

  1. Preheat the oven to 180C. Line a slice tin with baking paper.

  2. Mix all the base ingredients together. If it’s slightly too wet, add in a few more Tbsp of almond meal in and re-mix. Press into the lined slice tin evenly.

  3. Bake for 10 -12 minutes, or until a dark golden brown colour. Remove from the oven and allow to cool down.

  4. For the filling, add all the ingredients into a small-med saucepan. Heat on low for about a minute until the mix has warmed and melted. Mix through evenly.

  5. Pour the filling over the top of the base and place in the fridge to set.

  6. Add the chocolate and coconut oil into a saucepan and melt on a low heat.

  7. Pour over the set filling, sprinkle with your chosen toppings (I often use bee pollen, crushed, roasted peanuts and a wee sprinkle of salt) and place back into the fridge until the chocolate has set.

  8. When it’s ready, slice into squares and enjoy!
