Healthy Choc Chip Cookies (GF, DF, EF)

Makes 10-12

These cookies take less than 15 minutes to make. Simply mix all the ingredients together, roll into balls, then press them into the perfect cookie shapes on a baking tray and bake. Enjoy them warm from the oven.

INGREDIENTS

  • 1 ½ cups of almond flour

  • 3-4 Tbsp tapioca flour (white rice flour works too)

  • ⅓ cup maple syrup

  • ¼ cup melted coconut oil

  • 1 tsp baking soda

  • Pinch of salt

  • ½ tsp cinnamon

  • ½ tsp vanilla powder or 1-2 tsp vanilla extract

  • Chocolate chips or chopped chocolate (additive free), measure with your heart


INSTRUCTIONS

  1. Preheat the oven to 180C. Line two baking sheets with baking paper.

  2. Add all ingredients into a bowl and mix into a dough. 

  3. Roll the dough into 10-12 balls and place them onto the baking trays evenly spaced apart. Press them into cookies shapes.

  4. Place in the oven and bake for 10-12 minutes or until golden brown.

  5. Remove from the oven and cool down a bit. Enjoy warm.
