KEto Berry Ripe Bars
Gluten, dairy, grain, egg, nut & sugar free + paleo+ keto friendly with a cultured option
Makes 6 bars or 18 bite sized pieces
Ingredients
- 2 cups organic mixed berries
- 2.5 cups shredded coconut
- 1 tsp vanilla
- 1 cup coconut yoghurt
- Sweetener of your choice to taste (I used stevia for a keto friendly version)
Choc Coating Ingredients
- 1/2 cup quality chocolate powder
- 1/4 cup quality cacao butter
- 1-2 Tbsp coconut oil
- Pinch of salt
- 1 tsp vanilla
- Sweetener of your choice to taste
Method
1. Mix the mixed berries, shredded coconut, coconut yoghurt together in a bowl until evenly combined.
2. If you want to ferment this mixture simply add it to a clean glass jar, pop the lid on it and allow it to ferment for 6-12 hours. The time will depend on the weather as well as your preference on how cultured you like it.
3. When the mix is ready, stir through the vanilla and your choice of sweetener to taste.
4. Press the mixture into a lined loaf tin evenly, then place it in the freezer to set.
5. Remove it from the fridge and slice it into bars or bite sized pieces, then pop it back in the freezer while you make the chocolate coating.
6. Add all of the choc ingredients to a small saucepan on a low heat and allow it to melt and combine.
7. Remove the saucepan from the heat.
8. Dip the berry coconut bars into the chocolate mix evenly.
9. Place them onto a tray lined with baking paper and continue coating the bars or bites until all the mixture is used up.
10. Place them back into the fridge to set.
11. When they're ready, enjoy!
