This slice is packed with all the good stuff like gut, skin, mood boosting collagen and nourishing fats. It’s low in sugar, super versatile and always keepin’ those sugar cravings at bay. The best part - you can whip this recipe up in under 4 minutes. Freeze em’, grab one out whenever you need a yummy, nourishing pick me up snack. And if you can’t do nuts, don’t worry, I’ve got suggestions on how to make it nut free (and collagen free if you’re vegan) below.

Makes 28-32 squares (depending on the size you cut them)

INGREDIENTS

INSTRUCTIONS

  1. Line a slice tin or container with baking paper.

  2. Add the coconut butter into a small saucepan. Heat on a low to medium heat until melted. Remove from the heat.

  3. If you’re using powdered sweetener (lakanto), add it into your food processor and give it a quick blend to blitz it into a fine powder.

  4. Add all remaining ingredients into a food processor and blend to combine.

  5. Taste the mixture and add a touch more sweetener if desired. If you’ve chosen to use liquid sweeteners such as honey or maple syrup, you may need to add in a touch more collagen and shredded coconut to make up for the added wetness.

  6. Pour into the lined tin or container. Sprinkle a little more shredded coconut on top.

  7. Place into the fridge to set. Once it’s ready, slice into squares.

TIPS

  • If you can’t find macadamia nut butter, or if it’s too expensive, use almond or cashew nut butter

  • If you can’t tolerate nuts, use homemade sunflower seed butter or hulled tahini (however, it will strongly taste of tahini)

  • If you don’t use a powdered sweetener (ie; honey or maple syrup), you may need to add in a touch more collagen and/ or shredded coconut to make up for the added moisture

  • If you’re vegan or choose not to eat collagen, you can add in a touch more shredded coconut instead, or try adding in some adaptogens, or maca powder, your favourite mushroom powders, cinnamon or ginger powder or perhaps a scoop of your preferred protein powder

  • Freeze half of the squares in ziplock bags or silicon bags so you can have a healthy snack on hand
