Paleo Salted Caramel Brownies
These brownies are gluten, grain and sugar free + they’re made from whole foods and are ridiculously quick and easy to make.
Tuesdays always seem to be the best to drop a treat on the blog because you’re all looking for new things to make, and who doesn’t love a good chocolatey dessert or sweet treat for the rest of the week or to bake over the weekend?!
Makes 8 squares
Cooking time; 20-22 minutes
Ingredients
1 cup almond flour or hazelnut flour
1/3 - 1/2 cup lakanto sweetener (or your preferred sweetener)
1/3 - 1/2 cup Loving Earth cacao powder (the more you add, the darker/ richer the brownie)
1/2 cup melted ghee, unsalted butter or coconut oil
1/4 cup grass-fed collagen
2 eggs for a fudgier brownie or 3 eggs for a slightly cakier brownie
1 tsp baking soda
2 tsp apple cider vinegar
1-2 tsp ceylon cinnamon
A good pinch of salt
Seeds of 1 vanilla bean or 2-3 tsp vanilla extract
Topping
1 block of Loving Earth Salted Caramel Chocolate, broken pressed into the top of the brownie
Salt to sprinkle on top (optional)
Instructions
Preheat your oven to 170C or 340F. Line a bread loaf tin with baking paper.
Add all the brownie ingredients, starting with 1/3 cup cacao powder and 1/3 cup sweetener into a large bowl and mix to combine.
Taste the mixture and add more sweetener and/ or cacao powder if you want it richer and more chocolatey.
Scoop the mixture in the pre-lined tin and spread it out evenly.
Press the broken chocolate bar into the top of the brownie evenly.
Place the brownie into the oven for 20-22 minutes, or until cooked to your liking.
Remove from the oven. Slice and serve warm. Or if you’re like me and enjoy it cold, place in the fridge overnight. Then slice and serve it with a hot cup of Bulletproof Coffee.
