Probiotic Raspberry Jellies
This recipe is a fermented version of my much loved Berry Jelly recipe.

INGREDIENTS
400-450g organic raspberries fresh, frozen or fermented (or you can use strawberries or a mix of both)
1 cup filtered water
1 cup probiotic coconut water kefir
Juice and zest of 1 lemon
5 Tbsp organic gelatin powder
2-3 Tbsp lakanto or stevia to taste
INSTRUCTIONS
Blend the berries and water together in a blender until completely smooth.
Add the blended berries, gelatin and sweetener into a small saucepan and stir until combined. Allow this to sit for 1-2 minutes to allow the gelatin to bloom and thicken.
Now heat the gelatin berry mixture on a low to medium heat until the gelatin has completely dissolved.
Remove from the heat and allow to cool before mixing through probiotic kefir and the other remaining ingredients.
Pour into moulds or a lined container.
Place into the fridge to set.
When they’re ready, slice and enjoy. Store in an air-tight container in the fridge.
