Purple Cauliflower Puree

Veggie purees are one of my staple gut lovin’ recipes. Not only is it a really yummy and easy way to sneak more veggies into your diet, your kids will definitely love this one because of it’s vibrant purple colour! You can serve this recipe as a side with meatballs or chicken or make it into a soup by adding in other veggies, spice or herbs + extra bone broth. Ingredients

  • 1 purple cauliflower, chopped

  • 1 leek, chopped

  • 500ml chicken bone broth or filtered water

  • 1-2 cloves garlic

  • 1 Tbsp raw beetroot

  • 2-3 heaped Tbsp ghee or butter

  • Salt and pepper to taste

Instructions

  1. Add the cauliflower, leek, garlic and bone broth to a saucepan and bring to a simmer with the lid on. Cook until the veggies are soft and cooked through.

  2. Strain the liquid off through a fine mesh sieve and set aside (or drink this).

  3. Add the cooked veggies, raw beetroot, ghee or butter to a food processor or thermomix and blend until smooth. Scrape down the sides and re-blend until completely lump free.

  4. Pour into a large serving bowl and sprinkle salt and pepper over the top and serve with my Easy Paleo Meatballs.
