Sugar Free Blackberry Bliss Balls
If you received my newsletter last week, you would have seen the latest gut friendly recipe I shared - Cultured Cherries, Berries & Figs. I had a lot of questions asking me how I use them in recipes, so here’s a few of my favourites;
You can also just eat them as is for a yummy snack, or add to smoothies or on top of smoothie bowls. But for something a little different, I made fermented blackberry bliss balls. These little colourful morsels of joy are so easy to make and require only a handful of ingredients! They’re also nut, grain, sugar, dairy and gluten free and are loaded with quality fats from the coconut and gut loving protein from the collagen powder. They’re definitely a snack that will keep you satisfied.
Makes 10
Cooking time; 5-7 minutes
Ingredients
2-4 Tbsp coconut oil
1/3 cup coconut butter
1 cup dried coconut
1 cup fermented & frozen blackberries (or use frozen blueberries or raspberries)
1/4 cup collagen powder
1 tsp vanilla
Liquid stevia to taste
Instructions
Add the coconut to your thermomix or food processor and blitz until it has broken down.
Add the frozen berries, collagen, vanilla, stevia and coconut butter and blend until broken down. The texture will be pretty weird, but scrape down the sides and re-blend.
As the mix is blending, add in 1 Tbsp of coconut oil at a time until the mix starts coming together. You should be able to easily roll the dough into balls with your hands.
Roll the mix into balls and into dried coconut (if desired), place onto a plate and into the fridge to set.
