White Chocolate Cookie Dough Truffles

These little fudgey cookie dough truffels are packed full of beautifully nourishing fats, quality protein, they’re easy to digest, support skin, nail, hair, mood and gut health, eases aches and pains + they’re great for your hormones. The good thing about them is that they’re not only free from gluten, dairy and sugar, you can easily make them into whatever flavour you want. Peppermint, orange, ginger, lemon, choc chip, cinnamon, chocolate or turmeric, get as creative as you like! 


Ingredients

  • 1.5 cups cashews (I activated mine, but you can also use raw)

  • 1/3 cup coconut butter, melted

  • 1/4 tsp salt

  • 2 Tbsp coconut oil

  • Seeds of 1 vanilla bean

  • Optional; your preferred sweetener such as maple syrup or stevia if keto/ low carb, drizzle with melted chocolate

Method

  1. Add the cashews to your food processor or thermomix and blend until it forms a flour.

  2. Scrape down the sides of the bowl and add the melted coconut oil and coconut butter and blend until completely smooth and lump free.

  3. Add remaining ingredients and re-blend. Taste the mixture and adjust if needed.

  4. Press the mixture into a line container evenly and place in the fridge to set. Once it has set you can slice it into squares and then carefully, using your hands roll into balls.

  5. Drizzle with melted chocolate or enjoy plain. Store in the fridge or freezer.
